Today's Harvest Farm Fresh Zucchini
Summer Squash and Zucchini
Don't let the multiple names for "Summer Squash" fool you - these items can be used exactly the same! The main difference between them is the outside color. Some people will tell you the yellow ones are more sweet. Using one of each will allow your next dish to have a beautiful mix of colors.
Today's Harvest Zucchini Mix Recipe:
Splash of Olive Oil
1 Medium - Large Onion
3-4 Medium fresh zucchini or summer squash (mixture of colors makes this dish beautiful)
1 Jar Pasta Sauce
Mozzarella Cheese (Measure with your heart)
Sauté (Warm oil and onion until the onion starts to soften) in a large skillet on the stove.
Add the chopped zucchini to the oil and onions; stir until combined.
Place a lid on the mixture and let the zucchini cook; stirring occasionally.
When the zucchini is softened (ready to eat), stir one more time.
Cover the mixture with pasta sauce. DO NOT STIR AGAIN.
Add Mozzarella Cheese onto of the pasta sauce - add the lid and let sit until cheese melts.
Serve as side dish or add hamburger and sausage with the onion to make a main dish!
